Fresh Green Salad — Quick Recipe
Preparation time: About 10–15 minutes
Servings: Approximately 4 side portions
Ingredients
- 4 cups lettuce or mixed greens
- 1 cucumber, sliced
- 1–2 tomatoes, chopped
- ¼ red onion, thinly sliced
- 1 carrot, grated or julienned
- 2 tablespoons chopped parsley
Dressing:
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon fresh lemon juice
- Salt, to taste
- Black pepper, to taste
- 1 small minced garlic clove, optional
Instructions
- Wash the fresh produce and thoroughly dry the greens.
- Tear large lettuce leaves into manageable pieces.
- Prepare the cucumber, tomatoes, onion, carrot, and parsley.
- Place the greens in a large mixing bowl.
- Add the prepared vegetables and parsley.
- Whisk together the olive oil, lemon juice, salt, pepper, and optional garlic.
- Add only part of the dressing to the salad.
- Toss gently until the leaves are lightly coated.
- Taste and add additional dressing or seasoning only if needed.
- Serve shortly after dressing.
The easiest way to remember the method is dry, build, dress, taste.
Dry the greens well. Build the salad with a few ingredients that provide different flavors and textures. Dress it lightly just before serving. Then taste it before adding anything else.
Once you have those four steps right, you can change the vegetables and toppings dozens of ways without needing a new green salad recipe every time.
